Pumpkin Spice Fun

Cooking and baking have become two of my favorite de-stressing hobbies. I know I have to both eat and save money, which mean eating out isn't an option right now. Thus, cooking is both fun and necessary (and I love efficient hobbies as much as the next organization nut!).


At any rate, I don't know why it's taken me so long to discover the gloriousness of pumpkin. This fall I finally tried my first pumpkin spice latte and baked my first pumpkin spice bread (and pumpkin spice cookies!). Pumpkin spice pancakes are next on the docket. For now, I'd like to share this recipe for a cozy pumpkin drink by Tina from The Worktop.

Ingredients (slightly different from the original):

  • 1/4 cup pumpkin purée

  • 1 cup almond/regular milk (both work)

  • 2 tbsp sweetener

  • 1 tsp pumpkin spice

  • whipped cream

I heated and stirred everything but the whipped cream on the stove until it bubbled, then transferred it to a mug and topped with whipped cream and pumpkin spice. It was delicious and warming, and I will definitely be making it again. This seems like a pretty malleable concoction, so as long as you have pumpkin spice, pumpkin purée, and milk, you can adjust the sugar and flavor as desired.
